Take your mac-n-cheese bites out of the freeze and dredge through your egg wash (beat together the two eggs with about 2 tablespoons of water) and coat the ball with a second layer of bread crumbs. Scoop out the pasta and, pressing somewhat firmly, form into a ball shape. Dip the pasta rounds in the batter, then fry 2-3 at a time at 365 F, for about 2 minutes, turning rounds over at the 1-minute mark. Place a tall pot on the stove on medium-high heat with enough oil to submerge the pasta rounds.
